STUDI LITERATUR: PENGARUH SODIUM TRIMETAPHOSPHATE (STMP) SEBAGAI AGEN TAUTAN SILANG TERHADAP SIFAT FISIKOKIMIA BEBERAPA PATI ALAMI

Pati alami cenderung memiliki keterbatasan dalam pengaplikasian dibidang farmasi sehingga perlunya modifikasi untuk meningkatkan karakteristik fisikokimia pati alami. Penggunaan STMP telah banyak digunakan untuk mendapatkan pati dengan stabilitas tinggi, kelarutan rendah, dan gelatinisasi yang stabil. Maka dalam studi literatur ini bertujuan untuk mengatahui pengaruh STMP sebagai agen crosslink dan konsentrasi STMP terhadap karakter fisikokimia pati alami. Sodium trimetaphosphate memeiliki pengaruh terhadap karakteristik fisikokimia pati alami yang dihasilkan. Crosslinking pati alami dengan konsentrasi sodium trimetaphosphate (STMP) tertentu berpengaruh terhadap derajat crosslinking pati, yang berpengaruh terhadap kandungan amilosa dan sifat kristal pati. Mayoritas pati alami hasil crosslink mengalami perubahan sifat kelarutan dan swelling power lebih rendah, serta gelatinisasi yang lebih stabil. Pengaruh yang nyata dengan hadirnya gugus fungsi baru (P-O, P=O, P-O-C) pada struktur pati alami.
